- Trim any loose, yellow or damaged leaves.
- Give them a wash.
- Trim the base.
- If the Brussel sprout is quite large, then cut a cross in the base to make them cook evenly.
- Boil a pan of water, add a little bit of salt.
- Put the Brussel’s in the boiling water and then bring back to the boil.
- Cover the pan and cook for 5-10 minutes.
- Pan fry a little bit of salted butter, add pancetta and cook until golden-brown and crispy
- Add chestnuts until warmed through.
- Drain the Brussels and then add to the pan.
- Cook for 3-4 minutes
- Eat immediately
